The rainy season in Michoacán is fairly predictable.  Somewhat cloudy mornings are followed by gorgeous, sunny mid-days.  Around 4:00pm, we start to hear thunder in the distance.  Rains usually arrive by 5:00, and taper off by 7:00.  Occasionally we have rainstorms during the night while we drift in and out of sleep, listening to the patter on the (hopefully not leaking) roof.

Recipe: Black Bean Salad

Black bean salad is a great side dish or light meal to serve to groups. It is endlessly versatile, so it is easily prepared with what you have on hand (provided, of course, that you have black beans).

I prefer using dried black beans rather than canned; the texture is a bit firmer.  But, if you have canned black beans in your pantry and you’re in a hurry, canned works just fine.

If you’re worried about proportions, don’t be!  Go easy on the onion, jalapeño, and garlic; strong flavors that might hurt your end result
